Higher Marbling Standards


Sakura Wagyu Beef is highly marbled and graded based on Japanese Beef Marbling Standards (BMS).

  • Reserve = BMS 10-12 (Above USDA Prime scale, Prime +++)
  • Signature = BMS 8-9 (Above USDA Prime scale, Prime ++)
  • Classic = BMS 6-7 (equivalent to USDA-Prime)
  • Market = BMS 5 or below (equivalent to USDA-Choice)

Sakura’s world-class American Wagyu Beef is raised by family farmers who are certified in animal care. The cows are fed an expert-formulated vegetarian diet for a minimum of 400 days to promote high-marbling – and trust us, it’s worth the wait. Additionally, our cattle are raised in low stress environments without hormones or antibiotics.
