Higher Marbling Standards
Sakura Wagyu Beef is highly marbled and graded based on Japanese Beef Marbling Standards (BMS).
- Reserve = BMS 10-12 (Above USDA Prime scale, Prime +++)
- Signature = BMS 8-9 (Above USDA Prime scale, Prime ++)
- Classic = BMS 6-7 (equivalent to USDA-Prime)
- Market = BMS 5 or below (equivalent to USDA-Choice)
