All of our beef (except ground beef) is aged in-house. The aging process naturally breaks down enzymes in the meat and reduces exterior moisture levels, condensing more flavor inside each cut.

We are committed to sourcing the best ingredients we can from responsible farmers who care, and we're always working toward continuous improvement. Our partners are working with the ASPCA® and joining the nationwide effort to improve the lives of chickens. As such, we will source all our chicken from farms that meet or exceed Global Animal Partnership standards as the GAP program evolves its standards in breed selection and housing conditions (space, lighting, litter, enrichment) as well as employ a multi-step CAS system, which is widely considered more humane, by 2024. To demonstrate our support for animal welfare and transparency, we will label our chicken products with the GAP welfare certification by 2024.
